We understand there might be some confusion about the ingredients list. Specifically on why the ingredients list shows "Vital Wheat Gluten" - and why we say it's okay to have it on keto.
So let's start with what wheat gluten is.
Gluten is a protein that's found inside wheat. It's very useful when making keto recipes because it's what gives the dough the elastic, stretchy feel. Specifically, we use an ingredient called Vital Wheat Gluten.
And when it's made, the extraction process uses water to activate the gluten (and separate it from all the other parts of the wheat).Then once separated from the wheat, what's left is protein (A.K.A. gluten) - which we all know - protein is okay to have on keto, as long as it's within moderation. Because remember, gluten is protein that's found inside wheat.
And when all the other parts of the wheat are removed… It results in an extremely low carb count inside the Vital Wheat Gluten. And the reason the trace ingredients contain "wheat" is because we're required to disclose this due to allergens - since the Vital Wheat Gluten extraction process will contain some tiny trace elements of wheat.
But the trace is so small, it's nowhere near enough to kick you out of Ketosis.
All in all... The most tragic thing is the confusion that the name "Vital Wheat Gluten" causes. Because the name itself contains "wheat" - it tricks keto-ers into thinking that it's carb-based.
